This Goji Berry Hot Chocolate ramps up the nutrition of traditional hot chocolate with a shot of goji berry! Creamy and delicious, this Goji Berry Hot Chocolate is dairy-free, vegan and paleo.
I know that its technically not cocoa season yet, but I just couldn’t hold back on this one.
Well that and pretty much all of you asked for the chocolate recipe when I gave you the choice last week. I listened, dear friends. 🙂
So what’s the sitch with this here Goji Berry Hot Chocolate recipe? The sitch…you guys remember that show Kim Possible? Anyone? Fun fact, KP was a nickname that my club soccer coach gave me because my name is Kat and I could “make the impossible look possible”, he said. Yeah – I was good back in the day 😉
Wow, random tangent of reliving my glory days. Back on track here…
Right – hot chocolate!
The weather in my neck of the woods still has yet to reach its full Fall potential, but we are getting there. In fact, most nights I am finding myself snuggled into a blanket on the couch, wishing I had a hot, steaming mug of cocoa in my hands. You see where this is going, don’t ya? 😉
Last week I was snuggled on the couch with Opie, missing Ninja [away on business] while simultaneously craving chocolate and something warm. I could really only do something about one of those things, which is how I found myself wondering into the kitchen in search of something to fix my chocolate hankering. I was about to make myself my normal, boring hot chocolate recipe until I caught sight of a new product sitting on my counter.
Then the seas parted and this recipe was born.
But just what is a Goji Berry Hot Chocolate? So glad you asked.
Basically what I did was grab the new-to-me product, goji berry powder, and added it to my normal hot cocoa mixture. BOOM! Instant new recipe. Ok so I guess that is technically cheating, but remember when I told you I wasn’t proud of the fact that I was calling this new recipe a…recipe? I should probably stop rambling now.
Alright – goji berry powder. What the heck is it? Exactly what it sounds like, goji berries in powerdered form! That means that you can now add the nutrients and nutrition of goji berries into almost any recipe, without actually having to have the chunks of goji berry in there. Which totally works for this recipe since it would be weird having chunks of goji berries floating about. Though now that I think about it, they could be like little goji berry marshmallows! Maybe? Or not…
I’ve partnered with the fine people at OMG Organics a few times now [they’ve been so generous with their products!] and was super excited when I was given the opportunity to try out their goji berry powder. Not only had I never heard of it before but I also have a pretty intense love for goji’s, so I knew that I would fall head over heals in love with the powder – which I did!
Now let me be clear here, you don’t really taste the goji berry powder. There is a subtle hint of goji flavor – however because the cacao powder is so rich and dark it covers the majority of the goji flavor. The goji powder is mostly added here for the nutrients it provides while also giving off that subtle flavor. Nothing too dramatic or overbearing here at all. Of course if you want more of a goji berry latte, then simply remove the cacao powder! Just as delicious.
Another quick note here – the better quality cocoa powder you use, the richer and deeper the chocolate flavor. I prefer raw cacao powder for its nutrients and antioxidants, however any typical cocoa powder will work just fine. Just remember – higher quality ingredients yield a higher quality product!! 😉
- 3/4 cup almond milk
- 1/4 cup coconut milk, full fat or light
- 2 teaspoons raw cacao powder or other cocoa powder
- 2 teaspoons goji berry powder
- 1-2 teaspoons maple syrup
- shake cinnamon
- Place all ingredients into a small pot.
- Bring to a simmer and whisk well until smooth.
- Serve topped with whipped cream, if desired.
- Feel free to use all almond milk or other type of milk. The addition of canned coconut milk makes this hot chocolate super creamy and rich, which is why I love it so much!
