So I’ve got a bit of a confession to make.
Though I’m posting this incredible round-up full of gluten-free Cinco De Mayo recipes, I’m totally not going to be eating a single one today. Nope – not even close.
In my defense I actually had an entire fiesta planned – until Mom#2 informed me that she got Ninja and I tickets to join the family tonight for a baseball game. So instead of my Cinco De Mayo fiesta of chicken fajitas with homemade salsa verde dip and churro puppy chow, I’m going to be munching on popcorn, peanuts and [hopefully] some cotton candy.
Buuuuut I had planned on making a fiesta full of some of these recipes, so that sort of counts, right? 😉
Gluten-Free Cinco De Mayo Recipes
Since my love affair with tacos is fairly well documented here on the blog, it should come as no surprise that Mexican food is probably my favorite food cuisine. I just love the bold flavors and the variety within every dish – the perfect example being tacos!
I also have a major love affair with all things refried bean – is that weird? I typically don’t buy refried beans anymore from the market and simply “mash” my own whole beans at home and add seasonings, but for some reason I really adore beans in that half mashed, sort of mush form. Did that just gross anyone out? Sorry but how else do you describe refried beans?!
All this to say, even though I may not be celebrating Cinco De Mayo tonight, you’d better believe I still have my fiesta planned!
