Happy Friday, friends!
It’s been a bit of an odd week for me since Ninja was working nights this week [and waking me up at 1am when he got home] so today I’m keeping things fun and unstructured on the blog by sharing my first Friday Favorites of the year!

Say what you want about the place but hot dang can they make a good cup of coffee. My coworker and I have been treating each other to coffee once a week, which probably isn’t great for my wallet but I love being able to do something nice for my coworker/friend. Plus I get good coffee out of it. Wait – maybe that’s my real motive? 😉
Anyway, there’s a McDonald’s literally in the same parking lot as my gym so when I get to work at 4:45am I just walk on over when McDonald’s opens up at 5am and grab us some large black coffees. It makes the early morning soooo much better.
Raw PB Cups
Ok so I promise you that the new diet changes post is coming but until then here’s what I’ve been enjoying when that horrid sweet tooth of mine kicks in – homemade raw PB cups! I’ve been making them different each time, however the chocolate base is always the same – 1/2 cup raw cacao powder, 1/3 cup coconut oil and stevia to taste. SO. GOOD.
I personally feel that using stevia allows me to keep the cacao flavor really rich and almost bitter, which I’m a big fan of. I loooove dark chocolate – the darker the better in my opinion!
Bullet Journal Meal Planning
Remember last year how I outlined my meal planning technique? Well I’m still going strong with it! In fact, it’s actually been especially helpful with the new changes to both Ninja and I’s diets. Again, that post is coming….
P.S. the smoothie above is that Peanut Butter Apple Smoothie from last week. I seriously can’t get enough of it!
Trying In N’ Out for the first time!
After being married to an In N’ Out addict for 8 years, I finally had it for the first time.
Ok so a little back story here:
Ninja has been eating In N’ Out basically his entire life. His entire family loves it, all his friends love it and after every youth group event we would all go and the entire youth group would eat it together. Except for me.
In N’ Out was always a huge fear food of mine [fast food in general] so I always claimed I either didn’t like it or wasn’t hungry. As the years have progressed and my fear of fast food has diminished I still had yet to try it, but that was mostly because I would choose Chipotle while Ninja grabbed his beloved In N’ Out.
Well – I finally got around to trying it the other day! I went bunless to keep it gluten-free however I ordered a Double Double with cheese, no sauce and grilled onions. And it was pretty good! I still don’t know if I’d chose it over Chipotle though 😉
New stuff in the works!
With Ninja’s weird schedule this week and next it’s given me more free time to spend in the kitchen. I’ve already got a few recipes perfected and I’ve got a few more ideas that I’m kicking around, so recipe development is in full swing in 2018!
I’ve also got some plans to purchase a new camera lens, so hopefully photos around here start to look a bit better. That being said I also am awful at food styling, so maybe not 😉
