Banana Blondies with Caramel Frosting

  • For the Blondies:
  • 2 ripe bananas, mashed
  • ½ cup coconut oil, soft
  • 1 teaspoon vanilla extract
  • ½ cup coconut sugar
  • 1 cup gluten-free oat flour
  • For the Frosting:
  • ¼ cup coconut oil
  • ¼ cup maple syrup
  • 2 tablespoons almond butter
  • ¼ teaspoon vanilla extract
  • 1 cup powdered sugar
  • almond milk, to thin
  1. Preheat oven to 350 degrees. Line an 8x8 baking dish with parchment paper.
  2. In a bowl, beat together the bananas, coconut oil and vanilla until smooth. Add the coconut sugar and oat flour and mix until no lumps remain.
  3. Pour batter into prepared baking dish and bake for 25-30 minutes or until toothpick comes out clean.
  4. While blondies are baking, heat the coconut oil, maple syrup and almond butter and mix until smooth. Remove from heat and stir in vanilla extract.
  5. Add ¼ cup of caramel sauce to a bowl along with 1 cup powdered sugar. Beat until smooth. Add almond milk to thin as needed.
  6. Once blondies have cooled, spread frosting over top. Cut into 12 bars and serve.
