Dessert Pizza

What an opening ceremony!! Did you guys stay up all night to watch? We sure did! My favorite part of the ceremony was by far the flying doves on bikes. Looked so stinkin amazing!

Like I said yesterday, we had a little get together last night to celebrate the games. Lots of food, good friends, and the best athletes makes for a pretty fun night!

Besides making the chili, my contribution was of course dessert. I decided to get a little bit creative though, and tried a dish I have never made before.

Dessert Pizza
A healthified sugar cookie crust topped with a reduced fat cream cheese base makes this fruit dessert the perfect light finish to any summer meal

Crust Ingredients:

  • 3/4 cup whole-wheat pastry flour
  • 1/2 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup low-fat cottage cheese
  • 1/3 cup sugar
  • 3 tablespoons coconut oil, melted
  • 2 tablespoons almond milk
  • 1 1/2 teaspoons vanilla extract

“Sauce” Ingredients:

  • 1 pkg reduced fat cream cheese
  • 1/3- 1/2 C powdered sugar


  • blueberries
  • strawberries
  • raspberries

For crust: Whisk whole-wheat flour, all-purpose flour, baking powder and salt in a small bowl. Puree cottage cheese in a food processor. Add sugar, oil, milk and vanilla and process until smooth. Add the dry ingredients and pulse 4 to 5 times, just until the dough clumps together. Turn out onto a lightly floured work surface and press the dough into a ball. Dough will be sticky, just use plenty of flour. Knead several times, but do not overwork. Dust with flour, wrap in plastic wrap and refrigerate for at least 15 minutes.

Preheat oven to 400 degrees. Spread dough onto a large baking sheet coated with cooking spray. Bake for 15-20 minutes. Once cooled, whip cream cheese and sugar together. Spread onto crust, then top with toppings.




The dessert pizza was a huge hit! There was none left by the end of the night, so that’s a good sign right? The crust is not overly sweet, which I really like. I’d say if you wanted to make this more of a traditional sugar cookie crust, you should really add more sugar. I thought it was perfect as is though.

As for today, I have some business to attend to. And by business I mean I will be plopped in front of the tv watching the US all day!


I’ve got my Abby Wambach jersey ready to go for the US Women’s soccer game this morning. Because I typically can’t sit still when they have a game, I plan on getting my workout in while watching my ladies sweat it out on the field.

I can’t wait to cheer these ladies (and more) on today and throughout the games. GO USA!

    I didn’t really love the opening ceremony, to be honest. My favorite part was Mr. Bean haha. But to be fair, I didn’t stay up to watch the whole thing. It’s taped on our DVR, so maybe I need to watch the rest and see if I liked the end any better. 😉

    I’m looking forward to gymnastics, for sure!

    Love those patriotic nacho chips, how cool is that! I know where to come party when the 2016 games roll around haha 😉

    Oh my gosh you guys were so festive!!! I just went to Party City and got leis and beads for everyone, in red white and blue of course 😉 Haha

    I love watching gymnastics!!! :) We watched them tonight and it was fun since I’d just been to my gymnastics class this afternoon :)
