Happy New Year!! Hope you all had a wonderful and safe New Year’s Eve last night. Ninja and I didn’t do anything crazy (cause we are old and boring), but sometimes its the simplest of things that can make a night great.
I began my last day of 2012 with some chocolate nut butter loaded pancakes. Who said you can’t have chocolate first thing in the morning?!
Chocolate Dreams Pancakes
Delicious whole wheat pancakes with a subtle chocolate peanut butter taste!
- 1/4 C whole wheat pastry flour
- 1/2 tsp baking soda
- pinch salt
- 1 heaping tablespoon Dark Chocolate Dreams Peanut Butter
- 1/3 C almond milk
- 1/2 tsp vanilla extract
Mix everything together. Pour into pan and cook. Top with your favorite syrup and enjoy!
I topped my pancakes with a little bit of my favorite boysenberry syrup. These were so delicious, and the perfect way to start my last day of 2012! Along with my pancakes I had a large cup of coffee with a new coffee creamer I grabbed at the store. This baby was only $1 so I figured why not?!I’m trying to scale back on the coffee and am only having it a few times a week now, but this creamer may just have put me over the edge. I guess I’ll just have to go back on my no coffee regimen after this creamer is gone!
The most delicious peanut butter EVER. Seriously, find this stuff now. I’ve been addicted to celery boats recently, and this peanut butter is only going to help that addiction! I’ve already gone through a bunch of celery stalks in 2 days thanks to this stuff!
Peas & Quinoa Salad
So fluffy and delicious. After this picture I added on a bunch more feta cheese along with a hardboiled egg for some extra protein!
Our New Years Eve plans were simple, dinner at our favorite restaurant followed by a movie night with Ninja’s family. I even got a little gussied up! I curled my hair! Well, kinda. My thin stringy hair really is hard to work with when it comes to curls, so I did the best I could. Of course by the end of the night I looked like a hot mess, but whatever.The best garden burger in the entire world. Topped with caramelized onions, avocado, tomato and a whole mess of greens! Along side some bbq veggies. I’m pretty sure I don’t come up for air until this burger is gone. It’s so stinkin good, I literally lick my plate clean each time I have it!
After dinner we headed over to Ninja’s sister’s place where we just hung out and watched movies until a few minutes before midnight. Then we switched it over to New York to watch the ball drop in Times square. There was no booze, no loud obnoxious people, and no shenanigans. Just a perfect quiet night amongst family. Just the way I like it!
