Well this week has been pretty insane for me, so needless to say I am beyond thrilled that it’s Friday. After coaching 7 classes on Wednesday [as well as only getting about 3 hours of sleep], I struggled my way through yesterday and have no other plans than sitting on my butt tonight. I do have to coach tomorrow morning as well but for right now I’m just going to enjoy my Friday and relax!
All in all January was an interesting month, so let’s jump right into this Currently recap and catch up on a few things!
In my quest to cut down my coffee consumption and get my hormones back on track I’ve dove head first into the world of all things tea! Peppermint tea is actually one of my favorite drinks but I’ve always been pretty basic when it comes to my teas – either peppermint or green! Lately though I’ve been branching out in order to try to distract myself from a lack of coffee. This tea from Teavana is beyond good. I may have just swapped a coffee obsession for this tea….
Veggie Spring Rolls with Peanut Sauce
I found a pack of rice paper wraps in my pantry this past week and have been making veggie spring rolls nearly daily since. What is it about dunking raw veggies in peanut sauce that makes them so gosh darn amazing?! Don’t answer that…I clearly realize it’s the peanut butter…
The veggies that I’ve been using changes, however the mixture I use most often is:
- broccoli slaw
- mixed greens
- shredded carrot
- sliced bell pepper
I literally can’t stop eating them. I’m actually going to the store today to get more ingredients so that I can whip some up for the Super Bowl this weekend! I’m also planning on making those Stuffed Mini Bell Peppers that everyone in my family loves so much.
I did a re-shoot of these muffins last week and it rekindled my love for them. Y’all these muffins are the most fudgy, delicious muffins ever. I made some with peanut butter instead of tahini for Ninja and even he loved them! We’ve been enjoying them at night warmed up as a dessert. They are pretty much the most amazing thing ever, so head on over to the recipe and try them out!
Has anyone noticed my blog being a little slow or unavailable at times? Well apparently I’m moving up in the blog world and I’m in need of a slight upgrade due to the increase in traffic that I’ve been getting. It’s awesome that’s for sure, but it’s also stressful as heck. I don’t do well with technology so I’m sort of just spinning my wheels here trying to figure it all out…
January got busy for me and while it’s no excuse, I found myself turning away from my Bible reading in favor of mindless TV watching. At the end of a long day of coaching, reading, writing and blogging the last thing I have wanted to do is use more brain power, so I’ve been shutting down and ignoring my daily Bible sessions.
Ninja and I are part of a new Bible study so I’ve been using that as an excuse for not reading my Bible on my own but it’s just an excuse. God deserves to come first no matter what and it’s my goal this month to spend more time in His word, regardless of how tired my brain is!

This week we celebrated one member’s 1 year journey with us and it totally hit me just how incredibly blessed I’ve been to be a part of each and every one of these people’s lives. I’m so thankful to have the opportunity to coach these guys each and every morning. My 4am wake up call isn’t nearly so bad knowing that I get to see these smiling faces!

Not as lean, not as cut, not as obsessed with either 🙂
I’ve not only put on size but I’ve also gained so much more strength in the past year. But better than both of those things is the overall healthier mindset I’ve found. It isn’t always easy, I still have days that I struggle, but I can honestly say that looking at this comparison of photos brings me joy and nothing else.
Although that picture on the right definitely makes me want to keep lifting heavy. #givemeallmuscles
So January was kind of busy for me, but it was also pretty dang awesome. Here’s to hoping February will be even better.
