Welcome to the first full work week of 2018!
Unless of course you worked on New Year’s Day like I did, then that of course doesn’t apply to you 😉
So since my first recipe of 2018 was a boring smoothie [not really – it’s delicious, so go make it!], I wanted to make sure that my 2nd recipe of the year was much more exciting. I personally think that these Cranberry Lemon Bites are all sorts of exciting, especially with the blast of tart flavor!
With all of the Bites and Balls recipes that I’ve created for the blog, I can’t believe I’ve never made any involving lemon. There was those White Chocolate Lemon Popcorn Truffles, which are totally yummm, but definitely a dessert and not what I consider a snack bite or ball. These Cranberry Lemon Bites however, are 100% healthy snack approved!
Good thing too because my snack habit has been off the charts so far this year.
I mentioned that Ninja agreed to let me change his diet this year, swapping out his processed foods for wholesome, real food while also eliminating his addiction to Dr. Pepper [well, trying too!]. What I didn’t mention however was that I’ve also altered my own way of eating due to some health reasons that I’ve yet to really share with you guys. That post is coming, I think, so it will all make sense eventually, but just know for now that I’m tinkering with my diet.
Allll that to say I’ve been trying to increase my overall protein intake while taking my carbs down a bit. Nothing too crazy, my body thrives off of complex carbohydrates, however I’ve found that I rely on them far too much as the main macronutrient in my diet and I’m trying to offer my body other things to see what it does with it all.
That was all a really vague way of saying that I wanted to come up with a grain-free snack to enjoy when the cravings or munchies hit mid-day, as they so often do for me.
Enter in these Cranberry Lemon Bites!
Made from a combination of almond flour and coconut flour, these bites have insane texture to them. I would almost call them fudgy or truffle-like in texture because of how dang soft they are – and yet they hold together so well. I’m sort of kind of in love with them 🙂
And then there’s that lemon flavor.
It’s bright, tart and balanced perfectly with just a touch of maple syrup to sweeten. Paired with the dried cranberries which also offer a nice bite of tart and sweet, I’m fairly certain that these Cranberry Lemon Bites aren’t lacking in anything!
It hasn’t been hard cutting down my carbohydrate consumption, especially with these Cranberry Lemon Bites in the fridge ready for snacking. In my personal opinion, diet changes and healthy eating is never actually as hard as people think it is, you’ve just got to prepare in advance! Having meals and such prepared and ready to go whenever needed is the key to staying on track. What’s that saying – fail to plan and plan to fail? Something like that 😉
NOTE – Daddy’s orange tree is in full producing mode and I tried a batch of these Bites with orange instead of lemon and they were just as fantastic. Try splitting the batch half and half for some delicious citrus snack bites!
- 1½ cups almond flour
- ⅓ cup coconut flour
- ¼ cup maple syrup
- ¼ cup lemon juice, fresh
- ¼ cup coconut oil, soft
- ½ teaspoon vanilla extract
- 2 teaspoons lemon zest
- ¼ cup dried cranberries, roughly chopped
- Mix together the coconut oil, maple syrup, lemon juice and vanilla extract in a large bowl until smooth.
- Add remaining ingredients and mix until dough forms. Set dough in the fridge for 20 minutes to firm.
- Roll dough into 12-15 bites. Store in the fridge until ready to eat.
