If you guys haven’t noticed, my favorite recipes tend to be super simple.
I’m a pretty low maintenance kind of girl, which is probably why Ninja feels like he hit the jackpot with me, and that low maintenance personality bleeds into every aspect of my life, including my diet.
In fact, you could probably call me boring if you really wanted too but I kind of think that’s a bit mean, so let’s just go with low maintenance for now. Feel free to call me boring behind my back though 😉
Anyway, because of my no-fuss personality, the food that I enjoy most also tends to be no-fuss. Case in point:
- I prefer black coffee
- I take my burgers sans mustard, ketchup or mayo
- I love plain toast
- I’ll pick plain cheesecake over any other kind
And that’s just to name a few. These “quirks” may make for a boring diet to you but I’ve always been laid back when it comes to food. Growing up my favorite meals were fairly bland – plain meat and bread sandwiches [not even cheese] and white rice with broccoli and chicken were always at the top of my list. Of course my pallet has since exploded and improved, however my love for all things simple, easy and of course, delicious, has not.
Which is where these Coconut Turmeric Bites come into play.
I actually first posted these bites on Instagram and couldn’t help myself when it came to sharing them here with you guys. These little bites are just too good not too! And though I’m still head over heals in love with my Matcha Energy Bites these Coconut Turmeric Bites are quickly taking over the top spot. I’ve made three batches of them recently – they make for a great mid-afternoon snack that I can just pop into my mouth. I’ve actually just made another batch this week for the camping trip that Ninja and I are going on this weekend, but more about that trip tomorrow 🙂

Though turmeric has traditionally always been used in savory dishes, the “golden milk” craze is taking over more and more foods. There’s of course the Golden Milk Latte [both hot and cold] of which I am 100% in love with, then there’s ice cream, oatmeal, chia puddings….
The list of uses has literally become endless. So what’s one more recipe to throw onto the pile? I wanted to contribute to the madness too! 😉
Kidding. I’m not typically a bandwagoner but this is just one trend that I can’t ignore. Not only is it a trend that promotes healthful benefits for the body but it is also a trend that typically yields a pretty delicious result. Can’t say no to that, am I right?
So let’s break down these simple ingredients. These Coconut Turmeric Bites contain:
- almond butter
- coconut oil
- maple syrup
- shredded coconut
- coconut flour
- black pepper [to help absorb the curcumin]
Simple, wholesome ingredients that offer a whole lot of nutrition as well as yum. The bites themselves take on an almost fudge-like consistency, which makes me love them even more! They are especially delicious frozen.
Alright – enough chit chat! Here’s the recipe for these super simple yet crazy yummy Coconut Turmeric Bites. Let me know if you make them – and be sure to let me know what you think!
- 1 cup almond butter
- 1 tablespoon coconut oil
- 2 teaspoon maple syrup
- ¼ cup shredded coconut, unsweetened
- ½ cup coconut flour
- 2 teaspoons turmeric powder
- ½ teaspoon cinnamon
- pinch ground black pepper
- shredded coconut, for rolling [optional]
- Add all ingredients into a food processor. Process on high until mixture is combined. Place in the fridge to chill for 20 minutes.
- Remove batter from fridge and roll into 15-20 bites. Roll in extra shredded coconut, if desired.
