These Chocolate Tahini Muffins are made without flour, grain, gluten or dairy! Sweetened naturally, these muffins are gluten-free, paleo and dairy-free.
Guys, I’ve finally done it. I’ve finally made a muffin that Little Bro knew was healthy – and he still confessed to loving it. Shocked? I sure was!
Side Note – these Chocolate Tahini Muffins should most definitely be on your list of quick & healthy breakfast ideas. Just sayin’ 😉
So last week when I was creating these muffins, my only goal was to use up the rest of my tahini in some kind of delicious way. I’ve developed a love for the odd tasting nut butter [err, seed butter] over the past few months, which is what led to the desire to highlight the ingredient in some kind of way in a recipe. I 100% never intended on Little Bro sampling these muffins [didn’t think he’d be a fan of the tahini] but when he was over to watch football last Sunday he sort of just…helped himself.
Little Bro has this habit of going through my fridge whenever he’s over, which is weird considering I always make sure to have a coffee table full of snacks, but I guess he’s just a nosy teenager. I think the chocolate appearance of these muffins are what really drew Little Bro in – but the flavor is what had him going back for seconds!
I was side-eyeing and suppressing a grin the entire time he was munching away, wondering when he was going to throw the dang muffin at my head and curse me for tricking him into eating something “healthy” and “weird”, but instead he just kind of shrugged his shoulders and popped it back into his mouth for another bite.
Of course Little Bro could tell upon close examination of the muffin that there was something up with them – to which I told him about the bananas and tahini. I was expecting one of his normal rants about my weirdness and “tofu nugget” ingredients but much to my surprise, it never came! He just grabbed another muffin and sat back down on the couch.
To say I was shocked would be an understatement!
So what was it about these Chocolate Tahini Muffins that made them so appealing to Little Bro?
I wish I knew guys! Maybe the chocolate flavor is just so overbearing and rich that Little Bro focused on soley that and not the lack of grains, gluten, dairy and refined sugars. I mean seriously – these muffins only have 1/4 cup of honey, which is definitely not something that Little Bro is used too!
So yeah – I’m pretty pumped he liked them 🙂
I’m also pretty pumped about the flavor combo! Sure, peanut butter and chocolate will always remain one of my top flavor combinations, but tahini also pairs really well with the rich, bold flavor of dark chocolate. And then of course there’s the bananas, which pairs well with almost anything!
Can you believe these muffins are flourless? Just look at that!
So let’s recap real quick. These muffins are:
- refined sugar free
- loved by Little Bro
What more could you want from a muffin? 😉
These Chocolate Tahini Muffins were actually one of the first recipes I tried with my new Kitchen Aid and let me tell you – that sucker works like a dream! This batter came together in literally a few minutes and was in the oven in a flash. I love recipes like that!
So, if you are on the lookout for a new flavor combo to fall in love with this year, I’m highly recommending tahini and chocolate. I also highly recommend trying that combo out with these muffins 😉
