Anyone have anything fun planned tonight? Ninja and I have a night in planned with the World Series and several bags of candy. Yes friends, I said several. It’s going to be lit, as my 13 years old sister would say 😉
There may or may not also be one or two of these Chocolate Pumpkin Protein Bites involved in tonight’s spread, only because I legitimately cannot stop eating them. Just look at the fudge-like quality though – how the heck can you blame me?! Do you see the above picture? I mean, come onnnnnnn. These Bites are seriously like fudge in Bite form.
I’ve honestly already made two batches of these, one last week and another on Sunday which I had planned on sharing with my family until I selfishly opted to keep them to myself. I know – I’m a horrible person. #sorrynotsorry
I mean I’ll probably make a batch to share with them….eventually. Sometimes I just feel like I’m bomboarding them with stuff though, you know? Like, they are literally my only taste testers, I don’t want to spoil them! Gotta keep ’em hooked so they keep coming back for more, right? 😉

Speaking of which, do you guys think it would be weird if I brought some of my treats into the gym to share with the class that I teach? Obviously not cupcakes and such [though I have made batches of cookies for those who had birthdays!] but more so of the recipes like these Chocolate Pumpkin Protein Bites. I mean these beauties might look like fudge, but they are actually good for you! I just thought it might be fun to share some with my classes but I’m not sure if that is crossing some kind of weird trainer / client boundary. Thoughts?
Also, can we take a minute to marvel in the fact that these Chocolate Pumpkin Protein Bites are actually oat-free? I don’t think I can say that about many of my Bites recipes. Instead of oats or oat flour I used simply cocoa powder, coconut flour and protein powder, which really helped to give these Bites that incredible fudge-like texture.
Speaking of protein powder, I used a plant-based protein powder so that these Chocolate Pumpkin Protein Bites could remain vegan, however if you have no aversions to dairy or prefer a different type of protein powder, go ahead and use that! I also used an unflavored protein powder so that the chocolate and pumpkin flavors weren’t lost, though I’m sure a chocolate or vanilla protein powder would work just fine.
I hope that you’ll give these Chocolate Pumpkin Protein Bites a try. Not only are they insanely delicious but they are also gluten-free and grain-free, vegan, paleo and loaded with protein and healthy fats! Oh and chocolate – don’t forget the chocolate 😉
- ½ cup cocoa powder
- ¼ cup plant-based protein powder, unflavored
- ¼ cup coconut flour
- ½ cup canned pumpkin
- ¼ cup almond butter
- ¼ cup maple syrup
- 1 teaspoon pumpkin pie spice
- ½ teaspoon cinnamon
- ¼ cup mini chocolate chips, dairy-free
- In a large bowl, beat together canned pumpkin, almond butter and maple syrup until smooth. Add remaining ingredients and mix until well incorporated.
- Roll batter into 15-18 bites. Store in the fridge to firm up.
- Enjoy as a healthy and energizing snack!
