These Chocolate Peanut Butter Pretzel Quinoa Bites are the perfect sweet and salty snack! Made from cooked quinoa and gluten-free pretzels, these Bites are gluten-free, dairy-free and vegan.
Since the last five blog recipes have been desserts, I thought we’d take a break from all that sugar for a bit today and dive into something a little different. Don’t worry though, there’s plenty more sugar-filled recipes coming your way. What’s the holidays without them, right? 😉
If you’ve followed my blog for any amount of time, you should know that I tend to go through phases when it comes to my flavors. And no – I’m not talking about only pumpkin.

My current flavor kick? Chocolate and pretzels. Maybe it’s just a craving for the sweet and salty combo but it’s a combination of flavors that I’ve really been digging on lately. It’s actually a flavor combo that I’ve enjoyed since high school. In fact, back in the day my friend and I would go to the grocery store together and buy one bag of pretzels and one bag of dark chocolate chips, then proceed to open the bag of pretzels and dump the entire bag of chocolate chips into it. I’m sure you can imagine what happened next 😉
Needless to say, I love me some chocolate and pretzels, so these Chocolate Peanut Butter Pretzel Quinoa Bites are pretty much my obsession right now. And why on earth have I never thought of making a Bite recipe out of quinoa? Shame on me – shame, shame, shame! I may just completely overload the blog now with all things Quinoa Bites, guys because I’m pretty much obsessed with the texture, nutty flavor and of course, uber health benefits! [yep – I just used the word Uber and wasn’t referring to the driving service #imawesomelikethat ]
Can someone let me in on the secret to perfectly rolling Bites? Cause my rolling skills suck.
So quinoa in an energy bite – how does it work? Like a charm, my friends.
No but honestly these Chocolate Peanut Butter Pretzel Quinoa Bites have zero issues forming, holding their shape and staying together. I was worried at first that I would have to pulse together the ingredients to break down the quinoa a bit, but all these Bites require is a large bowl and some good biceps muscles! A quick stir, small bit of mashing and just the right amount of peanut butter keeps the Bites together with no issues whatsoever. I also added a few teaspoons of coconut oil which I think also helps to solidify the bites but I bet you could leave it out without any issues, especially if you are keeping these in the fridge!
Quick note in regards to the pretzels, they will eventually soften and lose their crunch, however I loved the slight salty texture they gave the bites, which is what my obsession with the chocolate and pretzel combination has always been about. Also, regular pretzels might hold up better when chilled, however gluten-free ones tend not to thanks to their lack of gluten [duhhh]. Regardless, I still adore these things!

- cooked quinoa
- cocoa powder
- crushed pretzels
- peanut butter
- maple syrup
Now tell me these don’t sound awesome.
And now if you’ll excuse me, I’m off to transport myself back to the good old days when I used to eat pretzels and chocolate chips by the handfuls. Man, those sure were the days.
- 1 cup cooked quinoa
- ¼ cup cocoa powder
- ½ cup gluten-free pretzel crumbs [roughly 1 cup pretzels, crushed]
- ½ cup peanut butter
- 3 tablespoons maple syrup
- 2 teaspoons coconut oil, softened
- 2 tablespoons mini chocolate chips, dairy-free, optional
- 2 tablespoons broken pretzel pieces, optional
- Add quinoa, cocoa powder, pretzel crumbs, peanut butter, maple syrup and coconut oil to a large bowl. Mix until batter comes together.
- Stir in mini chocolate chips and pretzel pieces, if using.
- Form batter into 15 balls. Chill in the fridge until ready to eat.
