A healthy pudding parfait that is bursting with antioxidants, this Chocolate Matcha Chia Pudding is vegan, paleo and gluten-free! Made without any dairy or refined sugars, this pudding is decadent enough for dessert but wholesome enough for a breakfast or snack!
I’ve been a green tea lover for years now, but for some reason buying matcha powder has never even occured to me until recently. And now that I’ve bought it and made my first homemade matcha latte, well you could say I’m pretty much hooked.
While matcha isn’t new to the world by any means, I think it makes it into the years top super-food list probably each and every year. Can we just talk about some of the benefits of this stuff?

- Boosts the immune system
- Stimulates metabolism
- Improves skin
- Lowers cholesterol
- Helps prevent cancer
And those are just to highlight some of the main benefits of matcha. Needless to say, matcha is well worthy of it’s superfood title!
I wanted to find other uses for my new found matcha obsession besides the obvious [drinking it] when I came upon the idea to add it to my favorite Chunky Monkey Pudding recipe. I didn’t want to add it into the pudding though, I wanted to show off that pretty green color! What’s a matcha-obssessed foodie to do? Make chocolate matcha chia pudding of course!
Before we really get into this recipe I have to say that this chunky monkey pudding recipe is still by far one of my favorites. It’s just so creamy and rich! I don’t know why I never thought to pair it with a chia pudding before, but they go together perfectly. Dare I say, they were meant to be! And because I adore the combination so much you can pretty much guarantee that there will be future combinations. Just warning you 😉
Both puddings are literally made in under 5 minutes each, you set them in the fridge to chill and set up overnight and BAM! you’ve got two puddings to combine! I also like that they are easy to assemble and store for future snacks or craving busters. I store mine in small mason jars with a lid [washed & cleaned jam or jelly jars work great!] for a quick grab and go snack. All you need is a spoon! Or not. You could always just try drinking it 😉
And people, if you’ve never tried chia pudding before, then this is the recipe for you.
And no, I’m not just saying that because it’s my own creation. Ok so maybe that is part of it, but its mostly because this pudding is so darn delicious!
- 3 bananas, ripe
- 1 tablespoon maple syrup
- 2 tablespoons cacao powder
- 1 teaspoon vanilla extract
- pinch sea salt
- 1/4 cup chia seeds
- 1 cup almond milk
- 1/2 teaspoon vanilla extract
- 1 1/2 teaspoons matcha powder
- 1 teaspoon maple syrup
- Blend ingredients in a high speed blender.
- Set in the fridge to set up.
- Mix all ingredients well.
- Set in the fridge at least 4 hours to set up.
- Layer matcha chia pudding with the chocolate pudding.
- Sprinkle with cacao nibs.
- Cooking time refers to chilling time.
- Make batches of these puddings ahead of time and assemble and store in small jars for perfect grab-and-go snacks throughout the week!
