I know that may come as a shock considering the recent recipes I’ve posted [S’more Oatmeal anyone?] but this recipe is freaking amazing. And simple. And easy. And did I mention amazing?
But first can we pause for just a second to notice that this is the first recipe that I’ve posted since that BBQ Bacon Potato Salad recipe that doesn’t involve chocolate or serve as a breakfast/pre-workout? I should really start to work on upping my main dish/side dish categories on this little blog of mine, but desserts and smoothies are just so much yummier 😉

So you might recall that I had mentioned a new love for stuffed avocados. And by love I mean obsession. And by obsession I mean that I’ve made several different stuffed avocados this past week, so much so that I had to go out mid-week to buy some more avocados. Thank goodness I live in California.
Side note – do you guys have any idea how expensive avocados are in other states? I know that I’ve got it pretty good living in California, but my father in law just got back from Washington where he said that 1 avocado was being sold at a farmer’s market for $4. FOUR DOLLARS FOR ONE AVOCADO! I’m sorry but I would have to move. Nope – no way I could do that [sorry for any of you Washington peeps that I just put on blast – I’m sure your state is great!].
Because at $4 a pop there is no way I could enjoy my daily stuffed avocado & that would be a shame.
But since I don’t have to fret about that nightmare I get to instead create these amazing Chickpea Salad Stuffed Avocados for you guys. I actually had planned on making a sort of tex-mex stuffed avocado but then Ninja left on business for a week and I was left home alone. When Ninja is gone my diet tends to shift to more of the vegetarian side since I don’t want to cook meat for just myself, so that is why these avocados got stuffed with chickpeas instead of chicken.
I have to say though, Ninja should leave me alone more often. This chickpea salad is freaking amazing and I used the leftovers the rest of the week on toast, in sandwiches and with crackers. It’s pretty much the bomb.com.
It’s also really, really simple to make!
When I was first playing around with the idea of these chickpea salad stuffed avocados, I wanted to make a simple chickpea salad to serve on top of a bed of greens or stuff into a sandwich. I got to rounding up my ingredients and noticed a few avocados in need of use, so that’s when I decided to stuff them with this salad goodness. Who needs bread when you’ve got a freaking avocado boat, am I right?
The perfect dish to serve for Meatless Monday, I hope that you’ll make these Chickpea Salad Stuffed Avocados and let me know what you think!
- 1 can garbonzo beans
- 1 stalk celery, chopped
- 1/2 red onion, diced
- 2 avocados
- 1/2 lemon, juiced
- 2 teaspoons garlic powder
- 1/2 tablespoon fresh dill
- salt & pepper to taste
- Halve and pit the avocados. Remove the flesh from each, leaving a bit of flesh around the sides of the avocado to keep the structure.
- Roughly mash together the chickpeas and avocado using the back of a fork. You can also pulse ingredients together in a food processor. Leave some chickpeas whole/chunky.
- Add in the remaining ingredients, tasting and seasoning as you go.
- Stuff each avocado skin with chickpea salad. Top with extra dill and salt and pepper.
