Happy WIAW! I had a rather rough beginning to this week, so let me just say how happy I am that we are getting over the hump today. I will be much happier when Friday hits!
My eats haven’t been too exciting lately, but I have been getting in to the holiday mood, so expect to see those holiday flavors popping up on the blog soon! I’ve been inhaling apples by the bushel recently in my favorite new breakfast plus I made my dear friend Amanda’s rockin’ applesauce the other day. I’ve got a great idea up my sleeve for that applesauce for one of our holiday parties coming up, I just hope it comes out how I’m picturing it!
Since the night’s have gotten so cold, my body has really been craving soups. Ninja isn’t a huge soup fan, but there are a few I can make that I know he enjoys.
Chicken Tortilla Soup
A quick and comforting soup that hits the Mexican food craving!
- 1 16 ounce can refried black beans
- 1 15 ounce can black beans, rinsed and drained
- 1 can reduced sodium chicken broth
- 1 1/2 C frozen corn
- 3/4 C chunky salsa
- 2 shredded chicken breasts
- 1/2 C water
- 1 C cheddar cheese
- 2 corn tortillas, sliced into thin strips
- 1/2 avocado, sliced
Preheat oven to 350. Toss corn tortilla strips with olive oil, and bake at 350 for 10 minutes, stirring once. In a large pot, boil first 7 ingredients. Reduce heat and let simmer for 10 minutes. Add cheese and cook over low heat until melted. Ladle into bowls, and top with tortilla strips and avocado.
I love soup. I honestly wish winter was longer here in LA so that I could eat more of it. Good thing I have a Bestie who loves soup as much as me though. We are actually planning a soup and bread day. Please tell me I’m not the only one who plans food dates with my best friend.
