I think I found my new favorite combination.
Ok so I take that back. Let’s not get too out of control here. While this new combination is mighty tasty, nothing will ever surpass chocolate and peanut butter.
We had a break from the heat the past few days which was really nice, but it looks like temperatures are on the rise once again here in my neck of the woods. With 100 degree temps promised for the rest of the week it looks like I will be living off of smoothies and this Cherry Lime Slushie to save myself from heat stroke. Not that I mind that much – this thing is dang good!
I’ve got to admit though, I think I might go into a severe depression once cherries leave my grocery shelves. I have been purchasing a bag weekly [I knowww, I’m obsessed] and though I have made a few recipes featuring cherries, I mostly just want to eat them by the handful.
That’s not a bad thing though – right? Well, maybe it is for my wallet…
So since I already did the chocolate & cherry combination [which is still one of my all-time favorite combos], I thought I would keep this recipe light, refreshing and fruity. It is summer after all and besides yesterday’s Honey Baked Plum recipe, I don’t feel like I’ve fully taken advantage of summer’s fresh bounty. Which is probably why I went overboard and used two fresh and bright ingredients in this slushie instead of just one. The more the merrier!
Speaking of merrier, do any of you watch the Hallmark channel? They totally have their “Christmas in July” thing going on right now and I feel like I have been asked to choose between training legs or training arms. Ok so weird example, but basically the re-runs of their old Christmas movies has me craving all things Christmas, even though I am beyond obsessed with summer produce right now!

Alright – lets turn our attention to this incredibly refreshing Cherry Lime Slushie.
So why a slushie and not a smoothie? Well as dreamy as a cold, creamy smoothie sounds, this flavor combination just screamed slushie to me. Maybe one day I’ll try the smoothie route but for now, slushie it is 🙂
I think my favorite part about this recipe [besides the incredibly refreshing flavors] is the icy goodness. I used a Vitamix to create this slushie but any high-speed blender should do the trick to pulverize the ice, just be sure to stop before it pulverizes too much. You want the slush-factor to remain intact, so keep an eye on it as you go along! And you can always add more ice if you go a bit overboard.

- 1 cup water
- 2 cups fresh cherries, pitted
- 1 lime, juiced and zested
- 1/2 cup ice
- maple/honey/or stevia to taste
- Combine all ingredients in a high-speed blender and blend on high. Make sure to watch the drink carefully so that the ice doesn't completely blend - you want some chunks!
- Add as much sweetener as needed. I used 2 teaspoons of maple syrup and it was delicious!
