Enjoy carrot cake in bite form with these healthy, gluten-free Carrot Cake Protein Bites!
Carrot cake in August? I promise there’s a good reason.
You see, today is a very special day in my household – it’s Daddy’s birthday!
If you can recall from last year, I tend to post carrot recipes in August instead of the normal Spring time months due to Daddy’s birthday being in August. You can find other carrot cake recipes here!
Daddy’s favorite cake is carrot cake, so in honor of him today I thought I would create a new bite recipe to add to my ever growing list.
Why not just bake a carrot cake? Pshhhh please! I totally did that too 😉 And ate it. And it was delicious. And now I’m sad that I don’t have anymore. Though I’ll admit, it was a bit of luck that any cream cheese frosting made it to the cake at all – where my fellow finger frosting dippers at?
But I digress. There’s no cake today friends – sorry! Instead you get these Carrot Cake Protein Bites, which are of course nothing like a real slice of carrot cake but they do resemble the flavors of carrot cake and also pack a whallop of nutrition. Soooo kind of the same? [not really, just go with me on this one guys!]
Now in order to really pay homage to Daddy today, these carrot cake protein bites had to contain the carrot cake flavor without the nuts. Daddy isn’t a fan, which means that these bites are made sans nuts – but with raisins! Though if you aren’t a fan of raisins I suppose you could leave those out as well 🙂
In all honesty, I think that’s why I adore carrot cake so much. There’s just so many ways to make it! With nuts or without them, sprinkled with coconut or none at all, with raisins or sans raisins, all of the above or none – there literally is a carrot cake out there for everyone!
Now I won’t lie to you and tell you that these bites are as delicious as a slice of homemade carrot cake. I might turn myself into a psych ward if I ever said that. No healthy bite recipe [I repeat, no healthy bite recipe] will ever be able to truly take the place of a slice of cake. They can however serve as a delicious, healthy snack!
Plus, these carrot cake protein bites serve as a great way for me to sneak in an extra bit of veggies, one of my major goals for myself this year! Instead of making them a simple energy bite I also wanted to add a bit of protein, so these bites contain both protein powder and collagen for an extra kick of nutrition. With protein, complex carbohydrates, fiber and plenty of other nutrients, these bites serve as a great mid-morning snack or afternoon pick me up!
Just don’t ask me if I’d pick one of these bites over a slice of actual carrot cake. Y’all must be crazy if you think I ever would! #teamsugar
That being said, for those days when there isn’t any cake around these bites serve as a great replacement! At least until you can find the time to bake a cake, of course 😉
- 1 cup gluten-free rolled oats
- ¼ cup vanilla protein powder of choice
- ¼ cup ground flaxseed
- ½ teaspoon cinnamon
- pinch nutmeg
- 2 scoops Vital Proteins Collagen
- 1 large carrot, shredded
- ½ cup almond butter
- ¼ cup maple syrup
- 2 tablespoons raisins [optional]
- ¼ cup shredded unsweetened coconut, for rolling
- Add all ingredients except for the coconut into a food processor. Pulse until mixture comes together and raisins have broken down slightly.
- Roll dough into 12-15 bites. Toss in shredded coconut, if desired.
- Store bites in the fridge until ready to eat.
