True story – I made these Carrot Cake Overnight Oats last week as a substitute just in case my Single Serve Carrot Cake didn’t turn out.
I wanted to be able to share a carrot cake inspired recipe last Tuesday in honor of Daddy’s birthday and though I did have the Single Serve Carrot Cake planned, I was worried it wouldn’t turn out how I wanted it to, so I whipped up these carrot cake overnight oats while the cake was baking up in the oven. Thankfully my cake did turn out, which meant I not only had these delicious overnight oats to eat plus a single serve cake but that I also had two carrot cake flavored recipes to share with you guys. I’m totally not complaining about any of that.
To say I have an obsession with overnight oats right now is a bit of an understatement. I know you guys might be sick of these recipes, but I just can’t stop sharing them. I think I might be subconsciously trying to force my love of them onto you 😉
But seriously, what’s better than starting the morning off on the right foot with a serving of veggies? Don’t get me wrong here vegetables don’t sound appealing to me at 6am, but when I woke up and knew I had these carrot cake overnight oats in the fridge my mouth actually started watering. Carrots for breakfast? Sign me up! [never thought I would be
saying typing that…]
And like my Single Serve Carrot Cake, I went ahead and loaded these carrot cake overnight oats up with raisins, walnuts and shreded toasted coconut. Feel free to take out whichever additions you don’t like, but I 100% feel that these overnight oats really benefit from all three add-ins. The best thing about overnight oat recipes is that you can add as much or as little as you’d like, so I say play around with it until you find the right ratio. I kind of went overboard here with everything, but that’s because I’m a texture freak and wanted as much oomph as possible!
Whether you include the raisins, walnuts and coconut, it’s the shredded carrots and cinnamon that really make this recipe. I used an entire large carrot for this recipe and thought that it created the perfect oat to carrot ratio. Sweetened subtly with just a bit of maple syrup, these carrot cake overnight oats are pretty much perfect!
- 1/2 cup gluten-free rolled oats
- 3/4 cup unsweetened almond milk
- 1 tablespoon chia seeds
- 1/4 cup grated carrots [1 large]
- 2 teaspoons maple syrup
- 1/4 teaspoon vanilla
- 1 teaspoon cinnamon
- 2 tablespoons raisins
- 1/4 cup walnuts, chopped
- 2 tablespoons shredded unsweetened coconut
- Combine all ingredients together. Set in the fridge overnight to set up.
- Stir once more in the morning before serving.
