Guys – this week has been crazy frustrating.
If you happened to catch my Instragram stories you might have seen the reasons why. Let’s just say that my blog going haywire isn’t the only irritation that I’ve been battling thus far this week. And it’s only Wednesday. I’m not sure I’m going to make it out of this week with my sanity.
It’s weeks like this that I’m thankful to have super simple recipes like this Broccoli & Kale Quinoa Salad. Not only has my patience been short this week but I’ve also had literally no energy to cook. Seriously, I think I’ve had smoothies and frozen muffins for nearly every meal. It’s sad but true – I just don’t have the brain power [or will power!] to make anything else!
Thankfully though, this Broccoli & Kale Quinoa Salad takes less than 20 minutes to cook.
This is actually an old recipe of mine that I published on the blog a few years back – and then proceeded to forget all about. Why does that always happen to me?! I recently just re-made my Blueberry Banana Muffins and I can’t believe that I ever forgot about them. Those things are crazy good!
The old recipe for this dish needed a bit re-vamping, so I altered it slightly this time around. It’s still crazy simple to make and requires just a few ingredients, but it doesn’t lack any of the flavor that made me love it the first time around!
If you remember from my last quinoa recipe, this isn’t a food I’ve always been in love with.
I tend to have issues with the texture of certain foods and quinoa certainly has an interesting texture. That being said, it pairs so well with the slight crunch of the broccoli and kale here that I could eat this entire batch in two days. Easily. How do I know? Because I’ve totally done it.
And while I typically enjoy this dish cooked and warm, I’ve also tried it as a raw salad and it is just as tasty! I have a feeling that the uncooked, raw version is going to be the one I choose when the summer months roll around. Plus, who doesn’t love a recipe that requires literally no cooking? Other than the quinoa [which I typically have on hand anyway as part of meal prep], all you have to do is toss all the remaining ingredients together!
So if you are looking for a super simple, meatless & gluten-free dish to throw on the table today, I highly recommend this Broccoli & Kale Quinoa Salad. Served warm or kept raw, it’s delicious both ways!
- 1 T olive oil
- 1 bunch of kale, stems removed and chopped
- 1 bunch broccoli florets, diced
- 1 clove garlic, minced
- 3 C reduced sodium veggie broth
- 1 C quinoa
- ¼ C feta cheese
- ½ tsp sea salt
- pepper to taste
- squeeze fresh lemon
- In a large pot, bring the broth and quinoa to a boil. Reduce to a simmer. Cook until liquid is absorbed. Set aside.
- Heat a pan over medium heat. Add the olive oil, garlic, broccoli and kale. Saute for 2-3 minutes or until kale has wilted and broccoli has begun to soften.
- Stir the kale mixture into the quinoa along with the feta cheese, salt and pepper. Add a fresh squeeze of lemon.
- Serve warm or chilled.
