I know that the world is currently facing all sorts of devastation and destruction thanks to natural disasters, civil wars and Mother Nature but I can’t ignore the fact that today is the anniversary of the September 11th attacks on my country. Though the rubble has long since been cleared and structures have been rebuilt and altered, the pain that comes with the memory as well as the loss of thousands of lives still remains.
Regardless of your feelings in regards to the politics of this country or its current state I hope that we can all agree that today deserves respect – the loved ones lost and the heroes who stepped up on that day deserve to be remembered, and though I hope the memory of that day stays with us everyday during the year it should take special precedence today. And for those of you in Texas, Florida or any other area of devastation right now, you are in my thoughts and prayers as well <3
So please – love your family, hug your friend and speak kindly today in honor of those who don’t get the chance too.
I have a love affair with quesadillas that has never been properly addressed on the blog. Clearly we are addressing it today 😉
This love of course stems from a life-long obsession with cheese as well, and while this Broccoli Cheddar Breakfast Quesadilla clearly contains cheese, it is actually of the dairy-free variety. Though normal cheddar cheese can be used instead, of course. As I’ve stated before I am not vegan nor do I follow a strict vegan diet, I just prefer to be as dairy-free as I can. That being said, I also like a huge plate of nachos slathered in dairy-filled cheese every now and again. To each their own, ya know?
Anyway, back to these quesadillas.
I never even considered a quesadilla for breakfast until a few years ago.
My mom and I were flying to Texas to go visit my older sister and were sitting in the LAX airport at 6am when my mom suggested we look around for some food. I think she partially suggested it to get my mind off of the fact I was about to get on an airplane [major fear of mine, remember?] but regardless we found ourselves a little cafe that was serving some delicious smelling food. I looked over the menu of basic breakfast items until I saw one that caught my eye – a veggie breakfast quesadilla.
Mom immediately ordered one for us to share and since that day I have been head over heels in love with breakfast quesadillas. In fact, upon arriving in Texas mom and I bought all of the ingredients so that we could make veggie breakfast quesadillas all week for us and my sister. We stuck to basic ingredients – bell pepper, broccoli, spinach, eggs and cheese all on a whole wheat tortilla served with salsa.
Though I do love the fully loaded veggie version that mom and I made together I must admit that this Broccoli Cheddar Breakfast Quesadilla ranks just a notch higher on the scale for me. Not only is there just 4 main ingredients needed but they also remind me of one of my favorite soups – broccoli cheddar soup! And while I haven’t had the soup version in quite some time due to all of the dairy in it, I have been enjoying this breakfast quesadilla version a lot recently. Thank goodness for new takes on old, favorite recipes am I right?
Speaking of a new spin, there is actually just a touch of hummus in these quesadillas which let me tell you takes the flavor over the top. I use garlic so that I get that lovely garlic flavor that I adore but plain works just as well! Of course you can also omit it if you preder 🙂
Another reason why I adore this recipe is because these quesadillas are completely freezer friendly, making them perfect for breakfast on-the-go or meal prep! Simply allow them to completely cool before wrapping them in plastic wrap and sticking them in a freezer friendly ziplock bag. Toss them in the freezer and grab them when you need one! Allow to defrost overnight in the fridge or pop them in the microwave for a few minutes to re-heat.
And of course as with most of my recipes, this broccoli cheddar breakfast quesadilla is completely customizable to YOU. Use whatever ingredients you have on hand – wheat tortillas, regular cheddar cheese, seasonings of choice – and create something that you and your family are going to enjoy. Remember – healthy eating is only boring and bland if you let it be!
- 1 brown rice tortilla, or wheat if not gluten-free
- 2 eggs, whisked
- 1 handful fresh broccoli florets, diced small
- ¼ cup dairy-free cheddar cheese
- 1 tablespoon garlic or plain hummus [optional]
- salt and pepper
- Heat a pan over medium heat. Add a splash of olive oil to the pan along with the broccoli and cook for 5 minutes or until broccoli is getting tender.
- Once broccoli has begun to soften, add the eggs. Cook and scramble, seasoning with salt and pepper to taste. Once fully cooked remove from pan but place hot pan back on the burner. Stir hummus into eggs if using.
- Sprinkle cheese onto one side of the tortilla and top with cooked egg mixture. Fold tortilla in half and press down firmly. Place tortilla into hot pan and cover. Cook 1-2 minutes before flipping.
- Slice quesadilla and serve with salsa.
