Crunchy and slightly tangy, this Broccoli & Brussels Sprout Salad is the perfect side dish or snack! Gluten-free, vegan and paleo.
Poor Brussels sprouts – they have such a bad reputation!
They are like the stinky kid in school. The one you try to be nice to because you know it isn’t their fault that they stink but their body odor is just too vile for anyone to really overlook.
Sorry, did that get a bit too specific? It’s just the description that popped into my head…
Anyway, with it being March and with Spring weather just a few weeks away, I thought it might be time to start sharing some of the lighter and brighter recipes I have saved up. I don’t have many so don’t get too excited, but I do have a few 🙂
But back to the stinky kid reference. Brussels sprouts to me get such an unfair reputation for being stinky when in reality it’s only how you cook them that makes them stinky. And in this case? Well there’s no cooking at all so there’s no stinkiness either. Fist pump for a stink-free kitchen and house!
But of course this salad is more than just brussels sprouts.
While I wanted to take advantage of brussels sprouts being in season right now, I also didn’t want to make a 100% brussel sprout salad. I do love the
stinky little cabbages, however I also wanted something with a little bit more oomph to it. So I grabbed another in season green veggie [broccoli is in peak season october to april but available year round] and got to work!
And of course with Daddy’s tree still producing an abundance of oranges, I decided to use fresh orange juice to create a simple yet delicious dressing.
It all worked out very, very well.
One of my favorite things about this Broccoli & Brussels Sprouts Salad is that its a salad without being a salad. Did that make any sense? Alright – let me try to rephrase that. For some reason I tend to get stuck in this mindset that salads can only be made of leafy greens, which is probably why I don’t make them very often. Guys my ability to create leafy green salads is literally non-existent. I don’t know what it is but I just can never seem to come up with something good!
Thankfully that lack of creativity doesn’t apply to other kinds of salads.
The salads I’ve made for the blog are:
See? No leafy greens in sight. I suppose we all need to play to our strengths, huh? 😉
Let me tell you though guys, this broccoli & brussels sprout salad packs a wallop in terms of flavor!! I love the crisp, crunchy freshness of the vegetables along with the zesty flavor of the orange. It’s even better the next day after the dressing has seeped into the veggies – they don’t get overly soft but do get a bit saturated in the dressing. It’s soooo tasty!
- 1 lb brussels sprouts, sliced thin
- 1 lb broccoli, cut into small florets
- ½ cup almonds, roughly chopped
- ¼ cup olive oil
- 3 tablespoons fresh orange juice
- 1 tablespoon dijon mustard
- 1 tablespoon maple syrup
- 2 tablespoons orange zest
- salt and pepper, to taste
- Toss together the brussels sprouts, broccoli and almonds.
- In a small bowl, whisk together the olive oil, orange juice, dijon, maple and orange zest. Pour over the broccoli mixture and toss to coat. Taste and season with salt and pepper as needed.
- Place salad in the fridge for at least 30 minutes to set and allow flavors to come together.
And on a random note – thank you guys so much for your comments on my last post. It was a really difficult post for me to write believe it or not – sometimes I just can’t get out what I’m trying to say. I appreciate you guys allowing me to be honest and open!
