Fluffy protein pancakes made without protein powder! Whipped up in less than 10 minutes these pancakes are quick fuel for those who are on the go.
It’s been a while since I’ve made pancakes for myself. I’ve made quite a few batches of chocolate chip pancakes for my siblings, but my cravings have been for those delicious waffle creations that have been swirling in my head. Until I recently finished a killer weight lifting session and needed a quick breakfast with some staying power.
And these protein pancakes were born!
Nothing personal against protein powder, but in my opinion it does not make a good pancake.
Maybe some of you have found the right brand, mixture, creation or whatever, but I haven’t as of yet. I need my pancakes to be fluffy – protein powder makes them dense. And that my friends, just won’t fly in my pancake-loving eyes.
I must admit however, the flavor combinations of protein powder make it quite the tease.
- Cinnamon Roll
- Chunky Monkey
- Mint Chocolate
- Cookies N Cream
- Cake Batter
And that’s just a few! Let’s not even get into the seasonal flavors. I might just cry…
Now of course I’m not saying that I don’t use protein powder. I do and I love that stuff. It goes in smoothies and in Power Balls for the most part – but sometimes I do bake with just a tiny bit. It’s just not my favorite texture when cooked.
Which is why these protein pancakes use Greek yogurt for protein instead of gummy texture inducing protein powder. The pancakes remain light and fluffy, yet also provide a nice chunk of filling protein on top of the energy-boosting carbohydrates.
Now for the most important question – Why on earth am I making blueberry pancakes in the fall? In all honesty, I had some blueberries that needed to be used up. I have no other rhyme or reason [which probably makes me a horrid blogger] other than not wanting my favorite little berry to go bad.
Which of course means that the fall flavored pancakes are coming because I have half a can of pumpkin sitting in my fridge currently that needs to be used STAT. Until then however, you get these little gems!
- 1/2 cup gluten-free oats
- 1 egg
- 1/4 cup plain greek yogurt
- 1/4 cup almond milk
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 teaspoon honey
- 1/3 cup blueberries
- Place all ingredients except blueberries into a high speed blender.
- Blend on high until smooth.
- Stir in blueberries.
- Pour by 1/4 cup of batter into a heated pan.
- Cook until bubbly, then flip.
