It’s no secret that breakfast is my favorite meal of the day.
I could probably eat breakfast foods all day long – waffles, pancakes, eggs, toast, parfaits, granola, cereal, smoothies – I probably don’t need to go on, but I’m trying to make a point here. I really, really, really like breakfast time.
That being said, because I love breakfast foods so much I also need to add variety and change it up from time to time. I mean, I did eat oats for breakfast for probably a solid year straight, but I can’t do that kind of thing anymore. Variety is the spice of life, and I want my life to be spicyyy.
Which is where this Blueberry Lemon Quinoa Parfait comes in.
I have been feeling in a bit of a rut lately with my breakfasts. Because I hit the gym before work I don’t want to eat a large breakfast, but usually when I get home I am so ridiculously hungry that I don’t want to spend time making anything. This usually leads to a smoothie or a quick pan of scrambled eggs with veggies, and as much as I adore both those foods, I was starting to get bored with them day after day.
So the other day when I reached into my fridge to scramble up some eggs post-workout and saw a batch of cooked up quinoa instead, the creative wheels started turning.
And that’s how this blueberry lemon quinoa parfait was born!
Now let’s address the yogurt in this parfait. I have this quinoa parfait listed as vegan, which it is due to a dairy-free yogurt, but you can easily swap Greek yogurt instead. That would help to boost the protein punch of this recipe as well, which is always a good thing when we are talking about a post-workout breakfast! [or any breakfast]
This recipe is a texture-freak’s dream, by the way.
Creamy, smooth yogurt is layered with slightly crunchy quinoa – and it’s dang near perfect, friends. Then of course we can’t forget the incredible pairing of lemon & blueberry, which is one of my go-to summer combinations. Can you get anymore bright than a citrus and a berry? I think not.
Though the lemon and blueberry flavors are incredible, I did say earlier in this post how I need a constant variety to keep life spicy. Which basically is code for expect more of these quinoa parfaits, because I am totally digging the them and am already imagining them in every flavor and combination out there. Did someone say matcha? [kidding – sort of]
Though clearly I’m going to need to go shopping to buy spoons in every color to match each parfait
- 1/2 cup dairy-free yogurt
- 1/3 cup quinoa, cooked
- 2 teaspoons maple syrup
- 1/2 lemon, zested and juiced
- 1/4 cup blueberries
- In a small bowl combine the yogurt, maple syrup, lemon zest and lemon juice. Add more maple syrup as needed for sweetness.
- Layer the quinoa, yogurt and blueberries to create the parfait.
- Top with lemon zest and more blueberries.
- Prep these parfaits ahead of time and store them in jars for an even quicker breakfast option!
