Guys, something weird is happening to me.
I can’t explain it but ever since I made the goal to eat more veggies this year, I’ve actually been enjoying vegetables more on a daily basis. Let me say that again for those of you who don’t clearly grasp that concept – I, Kat, am becoming a vegetable lover.
Whaaaaaaaaaaat? Scandalous, I know.
As I mentioned in my Chocolate Beet Smoothie post [seriously goooo make that sucker. It’s amazing!], beets have never been a favorite of mine. I honestly think they taste like dirt, which makes sense given that they come from deep within the dirt, but why don’t carrots or potatoes taste like dirt? I don’t know ya’ll – it literally boggles my mind.
That being said, I’ve realized more and more on my conquest to increase my veggie consumption that I need to step outside my veggie box [see what I did there?] if I ever want to actually make any progress. That means taking a step back from the traditional recipes [ie. steamed beets or shredded raw beets in salads] and finding ways to use vegetables that works for me.
And you know what I’ve discovered while on this little mission of mine? That I really, really like beet juice.
But seriously this color!
I’m trying to increase my intake of alll veggies though, so I figured a juice would be the perfect way to incorporate a few vegetables that I’m not so fond of.
So this Beet Carrot Juice includes:
- beets & carrots [of course]
Carrots are one of my all time favorite veggies, which is why I included them into this juice. I figured they could be a good distraction from the celery and the cucumber of which I am not so fond of. Like, at all. I’ll eat celery in soups or if its stuffed with nut butter but thats pretty much it. And cucumber? I don’t even like it in my water. Bleh.
So you can see that there wasn’t much promise of success for this beet carrot juice in the beginning. I was a little bit worried I’ll be honest but thankfully it turned out amazing!
I actually don’t have the latest and greatest juicer. It was an impulse buy of mine years back during my ED days when I thought juicing was the way to lose weight [because the celebs were doing it], so it only cost $80 or so and doesn’t juice leafy greens or soft fruits. None of which are included in this Beet Carrot Juice, so it serves its purpose here. I have considered buying myself a higher quality juicer but in the end I think it’ll just be another kitchen appliance to take up space. I have my vitamix and know that you can make juice with it by just using cheesecloth after blending, so maybe I’ll try that method for other juices. As of right now though I’m really digging this combination!
- 3 large carrots, tops removed
- ½ beet, peeled
- 3 stalks celery
- ½ cucumber
- Run all ingredients through a juicer. Mix with a spoon or straw and enjoy!
- Serve over ice if desired.
