Guys, I can’t get enough of apples this Fall.
In case you haven’t noticed [please tell me you have], I’ve made quite a few recipes this season that involve the apple and cinnamon combination.
And now of course there’s these Apple Pie Energy Bites. Wowza – that’s a lot of apples people.
And while yesterday’s Vegan Cinnamon Roll Cake is by far my favorite recipe as of late, these apple pie energy bites are right there behind them in second. Really though – energy bites should never past cake on any list, am I right? 😉

Now let’s talk about the flavors here because they are bold and bright and pretty freaking incredible. I was actually worried that the chunked dried apple would be hidden behind the almond butter but the two complement each other perfectly. Then of course there’s the cinnamon. Let’s not even get started on my obsession with that spice…
In all honesty, I really have no idea why I don’t post Bite recipes more often. I always have some kind of Bite in my fridge for pre-workout / snack purposes but I suppose since there are so many out there I just never think to post my own recipes. Should I keep posting them or leave the recipes to the masses?
Let’s take just a second to look over this ingredient list. While I no longer count calories I do count ingredients, trying to avoid as much artificial and chemical garbage as I can. And while that doesn’t always 100% ring true [gimme my Swedish fish!], I strive for each and every recipe here on this blog to be as chemical and artificial-free as it can be.
So what’s in these apple pie energy bites?
- gluten-free oats
- almond butter
- dried apples
- hemp seeds
- maple syrup
That’s it! Less than 6 ingredients involved and less than 10 minutes to make? I call that one healthy bite 😉
And while this batch only lasted me 3 days, I am 100% planning on re-making them this week. Maybe they might even make it to the Thanksgiving snack table as a football snack? Now that I think about it, that’s actually a pretty dang good idea…
Chock full of healthy fats, complex carbohydrates and plant-based protein, these apple pie energy bites are a healthy snack to have on hand when that snack-monster rears its ugly head. Oh and did I mention that they were delicious? Because they totally are!
- 3 cups gluten-free oats
- 1 cup dried apple rings, chopped
- 3/4 cup almond butter
- 2 tablespoons hemp seeds
- 1 tablespoon ground cinnamon
- 1/4 cup maple syrup
- Place all ingredients into a food processor.
- Process until ingredients come together. Batter does not need to be completely smooth, though it can be if you prefer.
- Roll batter into 15-20 bites depending on size.
- Store in the fridge until ready to be eaten.
