Made from just 3 basic ingredients [yes, THREE!], these savory sweet potato waffles are super quick to throw together. You are also getting an entire serving of vegetables for breakfast – it’s like a surprise bonus! While I tend to keep my sweet potato dishes savory, this waffles can easily be made more sweet if you prefer.

While the idea for these green monster oats was meant for Halloween, I actually use the base of this recipe at least once a week for my morning oatmeal. It is packed with nutrients from the superfood spirulina, which gives these oats their beautiful green color!
